This variety of kumquats are somewhat larger than usual with a very tender skin that's sweet and flesh that's tart and juicy. Native to China I thought it apropos to season with star anise. The two flavors go together so well. Try it as a glaze on grilled salmon or as a topping on rice pudding. Scrumptious!
